Food: M'semen (Moroccan Breakfast Pancakes)

While I was in Marrakech we stayed in the Dellarosa Hotel. Every morning they provided a breakfast buffet with all kinds of bread and western food but also a lot of Moroccan  types of breakfast. I really loved these small pancakes. I was not the only one because as soon as they brought them from the kitchen, within a couple of minutes everything was gone again! I found out they were called m'semen and as soon as I was home, I looked it up and tried to make them myself. They turned out pretty good, so here is the recipe for you!


M'semen
(4 servings)


What do you need


  • 200 grams of flour
  • 125 grams of wheat flour
  • 1 teaspoon salt
  • 1/2 teaspoon dry yeast
  • 3-5 dl lukewarm water
  • 2 tablespoons of sunflower oil
  • 1 sheet of baking paper
  • some extra oil 

Time to start!


Put al the flour, salt, yeast and water in a bowl and knead it for about 15-20 minutes, till there are no more clumps and the dough is completely smooth. Make small flat balls (about 5cm) lay them down on baking paper and let them rest for 10 minutes. Put some sunflower oil on your worksurface. Spread each ball of dough as thin as possible. Cover it in oil and sprinkle a little bit of flour on it. Fold the sides in at both sides like an envelop. Heat some sunflower oil in a bakingpan and bake the pancakes on both sides till they are goldenbrown. Put them on some kitchenpaper to get rid of the access oil.
That's all! It's best to eat them while they are still a warm.

  3. Aaaah, nu ik het recept lees komt het me ook enorm bekend voor!! Ik weet niet waar van... maar kan de smaak precies proeven, haha;)! Lekker!
